For those of you who DON’T know: I am OBSESSED with Trader Joe’s! Like actually in love. I’ve even gone on dates shopping at Trader Joe’s – THAT IS HOW PASSIONATE I AM ABOUT THEIR FOOD! Probably because there are sooo many new and delicious finds. Of which I’m going to share a few with you wink.
As an Italian myself, I LOVE gnocchi. Unfortunately, I’m gluten-free, so I haven’t had it in years. BUT THEN, Trader’s Joe’s created gluten-free cauliflower gnocchi and it quite actually made my life complete. Only ingredients? Cauliflower, cassava flour, potato starch, extra virgin olive oil, and sea salt. THAT’S IT! No flour, no eggs, no preservatives and it tastes AHHHH MAAAZZZZ INGGGGG! You’ll thank me later.
I’ve always been a lover of crab cakes – they’re a holiday tradition in my family. But I can never seem to find any that are ever gluten-free in stores sigh. But then, low and behold, I stumbled upon the gluten-free, fish-free jackfruit cakes! The seasoning and texture are JUST like that of real crab cakes – it’s honestly a little bit insane considering that it’s a fruit… But hey, I’m about it!
I’m picky when it comes to my pesto, and this one is the winner FOR SURE! I damn near could eat it plain (honestly, I have). But it tastes even better when it’s smothered on pasta, cauliflower rice, or gnocchi! #itsbomb
I’m alllll about brown rice, but do you want to know what I’m not about? Waiting. Patience is NOT a virtue I possess. And I’m sure as hell not waiting for brown rice to cook. Lucky for me, this brown rice microwaves in 3 minutes – YEP! ONLY 3 MINUTES! It’s a true godsend. Not to mention it’s the BEST tasting brown rice I have EVER had.
If you DON’T love mochi, we really can’t be friends. Pretty sure mochi is my favorite dessert… like ever. ESPECIALLY these ones because they’re gluten-free, soy-free AND vegan – no tummy aches for me! Just little balls of delicious coconut milk ice cream wrapped in rice wrappers. SOOOO GOOD! I definitely have eaten a whole box in one sitting… no shame.
